Baked Blueberry and Walnut Oatmeal (gluten-free, sugar-free, dairy-free)

If you are an oatmeal lover then you will go crazy over baked oatmeal!

If you are not an oatmeal lover… you might just become one after trying baked oatmeal!

Delicious oatmeal mixed with blueberries and walnuts… and baked to glorious perfection. Naturally gluten-free, refined sugar-free, dairy-free, soy-free, healthy and full of yummy flavor.

Ingredients:

To make baked oatmeal, I like to use my overnight chia oats recipe as the base… and then I just add a few extra ingredients to the mix and bake! It’s so simple.

Overnight Chia Oats ingredients (to use as the base):

-1 cup rolled oats
-1 cup filtered water
-2 teaspoons chia seeds
-1 tablespoon desiccated coconut
-1/2 teaspoon ground vanilla powder
-1/2 teaspoon cinnamon
-6 teaspoons 100% pure maple syrup

Extra ingredients to add before baking:

-1/2 cup blueberries
-1/4 cup chopped raw walnuts
-drop of cold-pressed coconut oil or macadamia nut oil (to grease dish)

Instructions:

How to make Overnight Chia Oats (to use as the base):

-mix the oats, water and chia seeds together in a jar
-add the desiccated coconut, vanilla powder and cinnamon to the jar and stir until well blended
-place a lid on the jar and pop into the fridge to soak overnight (at least 8 hours)
-once soaked, add the pure maple syrup

How to make baked oatmeal:

-preheat the oven to 180 degree’s Celsius (360 F)
-add the blueberries and chopped walnuts to the oat mix and stir in
-lightly grease a small baking dish with coconut oil or macadamia nut oil
-pour the oat mix into the greased baking dish
-bake for 20-30 minutes
-serve: eat with a spoon straight out of the dish or serve a portion into a bowl
-eat and enjoy!
