Cashew & Coconut Bliss Balls

These cashew & coconut bliss balls have been one of my favourite healthy treats to make for the past few weeks because they are genuinely really easy to make, and they’re totally delicious!

I love snacking on them and having them as a healthy dessert sometimes (it’s like a mini-dessert, which is all that you need really.)

This recipe is 100% refined sugar-free, dairy-free, gluten-free, grain-free and totally plant-based. It also contains healthy fats and protein, which is really great. Fats and protein help the body to process sugars and carbs more easily.

Both coconut and cashew nuts are a good source of healthy fats, and cashew nuts also contain good plant-based protein.

Ingredients:

-1 cup unsweetened cashew nut butter (or another nut butter of your choice if you can’t get cashew)
-2 + 1/4 cups desiccated coconut
-10 fresh medjool dates (soaked about 15 minutes)
-2 to 4 tablespoons melted coconut oil (depending on how runny your nut butter is, they vary by brand)
-1 teaspoon ground vanilla powder/ vanilla extract
-1/2 teaspoon cinnamon
-pinch sea salt

(makes about 25 bliss balls)

Instructions:

-pit the dates and soak for about 15 minutes in warm water, then drain

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-blend the soaked dates, melted coconut oil, nut butter, vanilla, cinnamon and sea salt together in high-powered blender until smooth

-you may need to stop every few minutes to stop and scrape down the sides before continuing to blend

-once the mixture has been blended and is smooth, pour it into a bowl and mix with 2 cups of the desiccated coconut

-use a spoon to scoop a tablespoon amount of the batter out at a time and gently roll each scoop into a ball between your palms

-use the other 1/4 cup desiccated coconut to dust each bliss ball after it has been gently rolled

-leave the bliss balls to set in the fridge for about 30 to 60 minutes

-store the bliss balls in the fridge in an airtight container to keep fresher for longer

-eat and enjoy every bite!!!
