Gooseberry & Pear Pie (grain-free, gluten-free, sugar-free, dairy-free)

Gooseberry & Pear Pie baked to glorious golden perfection. A slice of heaven…

I was trying to fall asleep the other night and I couldn’t because all I wanted to do was make this gooseberry and pear pie. I had the idea to make a pie using gooseberries a few weeks ago and I just had to try it! I also thought that pear would complement the flavor of the gooseberry well. Sometimes I think of recipes that I want to make, and I have to make them RIGHT NOW… like right away. So I made it (yay!) AND I LOVE IT!!! It’s pure golden baked goodness…

This pie is not only absolutely delicious… it’s also completely grain-free, gluten-free, refined sugar-free, dairy-free and totally healthy.

And it’s really easy to make (as-easy-as-pie). Does life get better?

Ingredients:

-1 cup fresh gooseberries
-2 or 3 pears (2 medium or 3 small)
-1 cup almond flour
-2 tablespoons coconut flour
-8 tablespoons coconut oil
-4 tablespoons 100% pure maple syrup/ agave syrup
-4 eggs (free-ranged and grain fed)
-2 teaspoons ground vanilla powder/ pure vanilla extract
-1/2 teaspoon cinnamon
-pinch sea salt

Instructions:

-preheat the oven to 170 degree’s Celsius (340 F)

-core the pears and cut into thin slices (long, thin slices – about half a cm thick)

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-mix the eggs, maple syrup, almond flour, coconut flour, vanilla, cinnamon and sea salt together in a bowl

-add the melted coconut oil and mix until well blended

-add the pear slices and the gooseberries to the bowl and gently mix the slices into the pie batter

-using a tiny bit of extra coconut oil, grease your pie dish (use a 800 ml/9 inch pie dish)

-pour the pie batter into the pie dish and spread the batter evenly with a spoon

-place in the oven and bake for 40-60 minutes (the pie is ready when you can pierce the pie with a sharp knife and it comes out clean)

-once cooked, remove from oven and leave to cool for a few minutes

-slice and serve

-enjoy warm & fresh out of the oven… or save a few slices for later (both are good!)

-eat and enjoy every bite!
