Healthy Chocolate Rice Crispy Treats (sugar-free, dairy-free, vegan)

Rice crispy treats were one of my absolute favorite things to make when I was little, so I decided to create a healthy recipe for these delicious treats.
They are so simple & easy to make and are perfect to keep for little healthy treats. Kids love them, adults love them, everyone loves them!

This recipe is naturally gluten-free as well as refined sugar-free, dairy-free, gulit-free and vegan.

But… eat with caution: They are highly addictive. You’ve been warned!

Ingredients:

-4 cups puffed brown rice
-1/2 cup almond, cashew or macadamia nut butter (unsweetened)
-1/2 cup cold-pressed coconut oil
-1/2 cup cacao powder (raw cocoa powder)
-1/4 cup 100% pure maple syrup
-1/2 teaspoon ground vanilla powder
-1/2 teaspoon cinnamon
-pinch of sea salt

Instructions:

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-sieve the cacao powder to get rid of any lumps

-once the coconut oil is melted, mix it in a bowl along with the cacao powder, pure maple syrup, vanilla powder, cinnamon and sea salt

-now add the nut butter to the mix

-add the puffed brown rice and mix until the mixture is well blended

-spoon mixture evenly into muffin papers

-place the rice crispy treats on a tray (still in their muffin papers) and in the fridge to set for 1-3 hours

-serve, eat & enjoy!

-store in the fridge in an airtight container
