MY FAVE HEALTHY SNACK

Peanut butter, coconut and oat bites

This is my favorite peanut butter snack! Well, this recipe tied with my 3 ingredient peanut butter cookies

This is actually an old recipe that I’ve pulled from the archives of my blog – it’s an old recipe that I’ve had on my blog for years (since November 2014). But this has become my snack obsession once again! This is actually also my sister’s favorite healthy snack, out of all of the healthy snack or treat recipes that I’ve made for her!

These little peanut butter, coconut and oat bites are an ideal snack that is filled with good whole carbs, good protein and some healthy fats too!

RECIPE

-1 cup smooth peanut butter (unsweetened)
-2 cups dry rolled oats
-1 cup desiccated coconut
-3 to 4 flat tablespoons cold-pressed coconut oil (melted)
-1/4 cup 100% pure maple syrup
-2 teaspoons ground vanilla powder/ pure vanilla extract
-1/2 to 1 teaspoon cinnamon

(makes about 30 bites – roughly 110 calories per bite)

Serving size: 2 bites


METHOD

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-in a bowl mix together the peanut butter, rolled oats, melted coconut oil, pure maple syrup, desiccated coconut, vanilla and cinnamon

-once the batter is really well mixed, spoon out a heaped tablespoon amount at a time and press the mixture firmly together in your hands to form a basic shape

-once pressed together, gently roll the shape between your palms to form a ball, then place on a tray lined with parchment paper

-as an alternative (if you don’t wanna get your hands dirty), you can pour all of the batter onto a flat tray lined with parchment paper

-press down the batter firmly with the back of a spoon

-once all of the bites have been pressed & gently rolled, place tray into the fridge and leave to set for an hour or two

-you can speed up the setting time by placing the bites in the freezer for about 30 minutes, and then removing from the freezer

-if you decided to press your batter onto a tray instead of rolling into bites, you can now cut into squares with a knife
