Quinoa, fig, avocado + mint salad
I love an adventurous salad! When I feel like eating something a little bit different (something more adventurous than an everyday kind of salad), but I still want something fresh – then I love making this salad! I’ve been loving this recipe so much at the moment.
Quinoa is an incredible addition to any salad, and so is avocado – but the fresh figs and mint leaves are what make this recipe memorable and amazing!
This recipe is gluten-free, dairy-free, sugar-free – and it contains good protein, healthy fats and good carbs!

-4 fresh figs (medium to large)
-1 cup cooked quinoa
-1 medium apple (peeled)
-30 to 40 almonds (raw or dry roasted)
-10 to 20 fresh mint leaves
-1 medium avocado
-squeeze of fresh lemon juice
-1 Tablespoon olive oil
-sea salt & black pepper (to taste)
-peel and chop the apple
-chop the avocado and mint leaves
-quarter the figs
-gently toss the cooked quinoa, chopped apple, avocado, almonds, mint leaves and fig quarters
-mix the olive oil, fresh lemon juice, sea salt and black pepper together to create the dressing
-toss the salad and dressing together
-serve fresh and enjoy!
