Savory Oatmeal – Done 2 Ways

WHAT IS SAVORY OATS?

Have you ever tried savory oatmeal? If not, then I highly recommend giving it a try – because it’s delicious!

If you have tried it – then I bet you’ll completely agree with me (about it being delicious).


CAMERON DIAZ MADE ME DO IT

I remember the first time that I ever heard about savory oatmeal. I was busy reading Cameron Diaz’s The Body Book, and in her book she mentions how she loves to make savory oatmeal for breakfast!

My initial reaction to reading this was “that sounds gross” – and then I thought about it some more and decided I’d have to give it a try. So I did try it – the very next morning for breakfast.

To be honest, I didn’t really know what to expect when I took the first bite of my savory oatmeal – but after one or two mouthfuls, I was hooked.

Cameron doesn’t share her specific recipe in her book, and so I used her idea as inspiration for this recipe.

These are my two favorite ways to eat savory oatmeal. I hope that you love them as much as I do!

Both of these recipes contain healthy essential fats, good carbs and good protein – and so either of them are perfect for a healthy, nutritious breakfast!

To make my savory oatmeal, I cook up some whole rolled oats with sea salt and cracked pepper. Then I sautee some green vegetables and serve them with my oatmeal and a drizzle of olive oil. I top it with either an egg or some raw almonds.

THE RECIPE

Ingredients (oatmeal):

-1/3 cup dry rolled oats
-1 cup water
-2 teaspoons olive oil
-1/4 onion
-1 cup zucchini slices (baby marrow)
-1 handful baby spinach
-sea salt
-cracked black pepper

Topping 1 – with an egg:

-1 free-ranged egg
-1/2 teaspoon olive oil
-pinch of sea salt
-cracked black pepper

Topping 2 – with almonds:

-20 raw almonds

THE METHOD

Instructions (oatmeal):

-bring the dry oats and water to a boil on the stove and then simmer on a low temperature for 10-15 minutes, stirring occasionally until fully cooked – add a little bit of sea salt & cracked pepper

-chop the onion and sautee it in a pan over a medium-high heat with 1 teaspoon of olive oil until it starts to caramelise & brown

-add the zucchini slices to the pan and fry until fully cooked, add the sea salt & cracked pepper to taste

-now add a handful of baby spinach to the mix in the pan for a minute or two until it has wilted

-serve the cooked oats in a bowl and top with the cooked veggies

-drizzle the savory oats with another teaspoon of olive oil

-choose a topping (below)

Topping 1 – with an egg:

-fry the egg with 1/2 teaspoon olive oil, sea salt & cracked pepper until cooked to satisfaction (it’s best to leave the yolk runny)

-serve the egg sunny side up or over easy!

-place the egg on top of the savory oats

-serve hot, eat with a spoon & enjoy every bite!

Topping 2 – with almonds:

-simply top the savory oats with the raw almonds (whole or roughly chopped)

-serve hot, eat with a spoon & enjoy every bite!
