Simple Green Salad

A delicious, light & refreshing simple green salad that’s easy to whip up and is ideal for a quick, nutritious meal or to be served as an appetizer. It’s also great as a salad for the table and will go along with almost any meal.

This recipe is well-balanced (it contains healthy fats, healthy protein and good carbs), is filled with lots nutrients and is anything but boring!

Ingredients (salad):

-1 big handful baby spinach
-1 cup shredded romaine lettuce
-1 carrot
-1 cup cherry tomatoes
-1/3 medium-large cucumber (peeled)
-1/4 to 1/2 large avocado
-1 tablespoon raw pumpkin seeds
-1 tablespoon sunflower seeds

Ingredients (dressing):

-1 teaspoon cold-pressed olive oil
-a squeeze of fresh lemon juice
-sea salt & cracked black pepper (to taste)

(serves 1 as a meal, serves 4 as an appetizer/ table salad)

Instructions:

-rinse all fresh ingredients
-shred/ roughly chop the romaine lettuce and baby spinach
-peel the cucumber and slice
-peel the carrot and then use the peeler to make carrot ribbons (you make the ribbons the same way that you peel the outer part of the carrot)
-remove the peel and pit from the avocado and slice
-halve the cherry tomatoes
-add all of the ingredients to a plate or bowl and sprinkle with the pumpkin and sunflower seeds
-toss the salad and get ready to make the dressing

Instructions (dressing):

-in a small bowl mix the olive oil, fresh lemon juice, sea salt and cracked black pepper
-drizzle the dressing over the salad
-toss the salad

Enjoy as a simple, nutritious meal or serve as an appetizer or a salad for the table.
