Sweet Omelette with Berries & Nutty Drizzle

SAY SWEET OMELETTE

Is there anything better than a berry-licious breakfast – or an omelette? How about a berry-licious, sweet omelette for breakfast?

I’m completely obsessed with berries at the moment – and for good reason! Berries contain a huge amount of vitamins, mineral and antioxidants (you know what they say – dynamite comes in small packages). Berries are also very low in sugar and calories AND they’re SUPER yummy!

I love eating berries in the morning in a smoothie, on top of a smoothie bowl, in oatmeal, with healthy pancakes or just by themselves – but sometimes when I’m feeling adventurous, I like to experiment and try something new.

This sweet omelette with mixed berries is my latest breakfast obsession. I love omelettes and in my opinion sweet omelettes are even better – have you ever tried a sweet omelette? Don’t leave here until you do try one!

This recipe is naturally refined sugar-free, dairy-free and gluten-free –  and it’s full of healthy fats, healthy protein and good carbs.

THE EASY RECIPE

Ingredients (omelette):

-2 free-ranged eggs
-1 teaspoon cold-pressed coconut oil
-tiny pinch sea salt

Ingredients (filling):

-1/2 cup fresh raspberries
-1/2 cup fresh blueberries
-1/8 cup chopped raw walnuts (or raw pecan nuts)
-1 tablespoon coconut flakes
-pinch of ground vanilla powder
-pinch of cinnamon

Ingredients (nutty drizzle):

-1 tablespoon nut butter (macadamia, cashew or almond)
-1 tablespoon 100% pure maple syrup (pure agave syrup or honey will work too)


THE METHOD

Instructions:

-whisk the eggs together until well blended with a teeny tiny pinch of sea salt
-pour the whisked eggs into a heated pan that has been greased with 1 teaspoon oil
-once the one side is cooked, flip with a spatula and cook the second side
-please note that it’s always easiest to make an omelette with a good quality non-stick frying pan, but it is possible to make without a non-stick pan
-serve the cooked omelette on a plate
-mix the nut butter & pure maple syrup together to make the nutty drizzle
-fill or top the cooked omelette with fresh raspberries, blueberries, chopped nuts & coconut flakes
-drizzle the “nutty drizzle” over the omelette
-sprinkle a little cinnamon & vanilla over the sweet omelette
-serve, eat & enjoy every bite!
