Apple Pie Oatmeal

A sweet & spicy, satisfying apple pie oatmeal breakfast creation with raisins and chopped nuts.

This oatmeal recipe, inspired by the world famous apple pie, is a nourishing healthy breakfast that contains good plant-based protein, healthy essential fats and good carbs. It’s a well balanced meal!

I love the simple flavours of the apple, cinnamon, vanilla, oats, raisins and pecan nuts… alone they are delicious but together they are out-of-this-world amazing!

This breakfast is satisfying, delicious-yet-simple, filling and it will keep you going for hours. It’s also 100% refined sugar-free, dairy-free, gluten-free, soy-free and free from any other processed or refined ingredients.

A few fun facts about apples: The apple is the most popular fruit in the world – and for good reason! An apple is easy to carry around (good for snacks), it’s delicious eaten by itself or added to breakfasts & desserts and it’s packed with nutrients. The apple is very high in vitamin C, vitamin K, phytonutrients (a type of antioxidant), fibre and potassium!

Ingredients (oats):

-1/2 cup rolled oats
-1 + 1/2 cups water
-1 teaspoon cold-pressed coconut oil
-1 teaspoon almond butter
-3 teaspoons 100% pure maple syrup
-1 teaspoon vanilla
-1 teaspoon cinnamon
-pinch nutmeg

Ingredients (topping):

-2 apples (peeled & cored)
-4 tablespoons water
-10 raw pecan nuts (chopped)
-1 teaspoons unsweetened raisins

Instructions (oats):

-bring the dry oats and water to a boil on the stove and then simmer on a low temperature for 10-15 minutes, stirring occasionally until fully cooked

-once cooked, remove oats from the stove and stir the coconut oil, almond butter, pure maple syrup, vanilla, cinnamon and nutmeg into the oats

-serve in a bowl

-add the toppings (instructions below)

Instructions (topping):

-core and peel apples, then slice
-cook the apple slices with 4 Tbs water over a low-medium heat until soft/ cooked
-roughly chop the pecan nuts
-add cooked apple slices, chopped pecan nuts & raisins to the cooked oatmeal
-serve hot, eat & enjoy!
