THE STORY OF THE BROWNIE

One night I was trying to fall asleep – and then I had this great idea to make flourless chocolate brownies using only dates, cacao powder, eggs and coconut oil.

I thought “I bet these will be the easiest chocolate brownies to make in the world”, and then I barely slept a wink all night because I was SO excited to get up and give my idea a try!

Sometimes I get way to excited about food – what can I say, I’m a total foodie.

So, the next morning I got up really early (after barely sleeping from excitement) and I made my brownies. AND – they were amazing!

The next night I slept like a baby – completely content.

-1/3 cup cold-pressed coconut oil (melted)

Optional ingredients (to make them even tastier):

-1/2 to 1 teaspoon cinnamon

THE METHOD

Instructions:

-preheat the oven to 180 degree’s Celsius/ 360 Fahrenheit

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-pit the dates and soak them in warm water for 5-10 minutes

-after a few minutes, remove the dates from the water

-blend the soaked dates, melted coconut oil, eggs and cacao powder together in a blender until smooth

-grease a baking dish with extra coconut oil and pour the brownie batter into the dish

-smooth out the top of the batter with the back of a spoon

-bake for 20-25 minutes (depending on thickness)

-you will know that the batch is ready when you can pierce it with a sharp knife and it comes out clean

-once cooked, remove the brownies from the oven and let them cool

-sprinkle with extra cacao powder (optional)

-cut into squares

-eat, share and enjoy!

-eat the brownies by themselves… or serve with a sprinkle of cinnamon, a drizzle of nut butter, a drizzle of pure maple syrup and berries… it’s amazing!

-store brownies in an airtight container in a cool place to keep fresh
