Healthy Breakfast Muffins (gluten-free, sugar-free, dairy-free)

Healthy muffins that are perfect for a nutritious breakfast on-the-go!
(They’re also great to keep for a quick snack.)

I specifically created these muffins as healthy breakfast muffins for people who don’t have a lot of time in the morning, but who still want to maintain a healthy diet.

These muffins are delicious and they are filled lots & lots of nutrients. They contain healthy protein, essential fats (including Omega 3) and good carbs! There you go, it’s all that you need for breakfast!

Ingredients:

-1 cup rolled oats
-1 cup filtered water
-3 medium bananas
-2 large free-ranged eggs
-1/2 cup raw whole almonds
-1/4 cup raw walnut pieces
-4 teaspoons chia seeds
-4 teaspoons flax seeds
-1/4 cup coconut flour
-1/2 cup almond flour
-2 tablespoons desiccated coconut
-8 tablespoons cold-pressed coconut oil
-20 dried, pitted dates
-4 tablespoons pure agave syrup
-pinch sea salt

Instructions:

-soak the oats with the water in a jar overnight (about 10 hours)
-mash the bananas
-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt
-roughly chop the dates
-in a bowl, mix the soaked oats with the mashed banana, eggs, almond flour, coconut flour, desiccated coconut, agave syrup, cinnamon and sea salt
-add the walnut pieces, chopped almonds, chopped dates, chia seeds and flax seeds to the batter
-add the melted coconut oil and mix the batter thoroughly
-grease muffin pans with additional coconut oil and fill muffin pans with batter (please note that the muffins will not rise, so you should fill the pans fully)
-preheat oven to 180 degree’s Celsius (360 F)
-if muffin pans are small, bake muffins for 20-30 minutes (I like to make these small)
-if muffins pans are large, bake for 40-60 minutes
-you will know that muffins are ready when you can pierce them with a sharp knife bringing it out dry
-when ready, remove from the oven and leave to cool for 20-30 minutes
-eat and enjoy!

Serving suggestions:

-eat fresh out of the oven (yum!)
-store in an airtight container and save for easy breakfasts
-serve with a dollop of your favorite nut butter (but they’re perfect eaten plain too!)
