I tried making my ultimate high-protein bar using only healthy whole food anti-inflammatory ingredients.. They’ve got 18g protein and are less than $1 to make (70¢) with high quality ingredients.. It’s also no-bake and easy to make in just a few minutes.
I decided to call these my “power puff protein bars”, because they’re made with edamame protein puffs and protein gives you power. I also like the power puff girls 🙂

MY PROTEIN BAR RECIPE
- 260g medjool dates (soaked 5 min then drained well, smashed)
- 110g edamame protein puffs
- 60g protein powder (plain unsweetened)
- 2 tbsp chia (blended)
- 25g rolled oats
- ¼ cup almond butter
- 2 tbsp coconut oil
- 1 tsp vanilla
- ¼ tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp instant coffee
- 3 tbsp cocoa
- 1/4 cup desiccated coconut
- 90g dark chocolate (70%, 85%, or sweetened with stevia)
Makes 10 bars


TOPPING IDEAS
- Chopped dry roasted hazelnuts
- Chopped dry roasted or raw pistachios
- Chopped dry roasted almonds
- Goji berries
- Coconut flakes
- Blue coconut flakes (recipe below)
- Just plain chocolate on top works too!
BLUE COCONUT RECIPE
- 1/4 tsp blue spirulina
- 1 tsp water
- 1/4 cup coconut flakes
*mix the spirulina and water together, then mix in the coconut flakes. Dry on a baking tray covered with parchment paper for 24 hours at room temperature before adding on top of your bars.

- With sugar-free chocolate (sweetened with stevia): 280 calories per bar
- With 70% chocolate (sweetened with coconut sugar): 310 calories per bar
