Banana and Sweet Potato Frittata
BANANA + SWEET POTATO
A sweet and savory frittata with banana and sweet potato slices.
I love serving this with avocado and fresh arugula. It’s so delicious!
I know this may seem like an interesting or strange food combination (frittata with banana and sweet potato), but it’s really really good – something I’ve been making a lot lately.

This recipe is gluten-free, dairy-free – and it contains good fats, protein and healthy carbs.
THE RECIPE
Ingredients:
-3 large eggs
-1 large banana
-1 medium sweet potato
-2 teaspoons cold-pressed macadamia nut oil
-sea salt & cracked pepper (to taste)
Suggested toppings:
-1/4 avocado
-1 small handful fresh arugula (rocket)
Instructions:
-rinse sweet potato and thinly slice to make rings
-fry in a pan with 1/2 tablespoon macadamia nut oil (over a medium heat) until cooked (it doesn’t matter if some slices crumble)
-crack eggs into a bowl and whisk until well blended
-peel and slice banana
-add banana and cooked sweet potato slices to egg mix
-add sea salt and cracked pepper
-add 1/2 tablespoon macadamia nut oil to large frying pan and then pour the entire mix into the pan
-fry over a medium heat until cooked (can flip half way to cook both sides or use a lid to cook the top side)
-remove from pan with a flat spatula, slice like a pizza and serve hot
-place fresh avocado and arugula on top of frittata slices
-eat and enjoy!
