BANANA WALNUT BREAD
A delicious and healthy banana walnut bread recipe that is grain-free, gluten-free, sugar-free and dairy-free.
Simple, easy-to-make and ideal for quick breakfasts, yummy snacks and healthy treats.
I love having a slice of this banana walnut bread with crunchy peanut butter (or almond butter). I’ll have it fresh out of the oven, but it’s also great for a mid morning healthy treat – or for breakfast!

THE RECIPE
Ingredients:
-4 small-medium/ 3 large banana’s
-1 cup roughly chopped, raw walnuts
-1/2 cup coconut flour
-1/2 cup almond flour
-1/2 cup cold-pressed coconut oil
-4 large eggs
-1/4 cup honey
-1 teaspoon cinnamon
-1/2 teaspoon ground vanilla powder
-pinch of sea salt
THE METHOD
Instructions:
-preheat oven to 175-180 degree’s Celsius (350 F)
-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt
-peel and mash the banana’s with a fork until well blended
-mix the coconut flour, almond flour, cinnamon, vanilla powder, sea salt and the chopped walnuts together in a bowl
-whisk the eggs and add to the mix
-add the honey and the melted coconut oil and mix well
-grease a bread pan with some extra coconut oil
-neatly line the bottom and the 2 sides of the bread pan with parchment or wax paper
-fill the greased & lined pan with the banana walnut batter (please note that the bread will not rise while baking)
-even the batter out with the back of a spoon
-bake for 35 to 45 minutes (you will know that the bread is ready when you can pierce it with a sharp knife bringing it out dry)
-leave to cool for a few minutes
-slice, serve, eat and enjoy!
