My favorite chewy chocolate cookies with oats and coconut
This my favorite recipe for chewy chocolatey cookies, and so I always end up eating way too many straight out of the oven – they smell too good to leave alone!
I always love baking with oats and coconut, and so it was a no-brainer for me to add these to my chewy chocolate cookie recipe.

This recipe is gluten-free, sugar-free and dairy-free. It also contains good carbs and healthy fats.
THE RECIPE
Ingredients:
-12-15 fresh medjool dates
-1 cup rolled oats (dry)
-1/2 cup desiccated coconut
-1/3 cup coconut oil (melted)
-2 eggs
-1/2 cup cacao powder (raw cocoa)
-1 teaspoon cinnamon
-1 teaspoon ground vanilla powder (optional)
-pinch sea salt
-optional: 1 Tablespoon 100% pure maple syrup (to make sweeter)
(makes 15-20 cookies)
THE METHOD
Instructions:
-Preheat your oven to 180 degrees C/ 360 degrees F
-Melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water, then place the coconut oil into the small bowl and wait for it to melt
-Blend the pitted dates, melted coconut oil, eggs, cacao powder, vanilla, cinnamon and sea salt together (in a blender) until it forms a smooth batter
-Pour the batter into a bowl and stir in the rolled oats and desiccated coconut
-Grease an oven tray and spoon the cookie dough batter onto the oven tray (in round cookie shapes)
-Bake for roughly 15 minutes
-Leave to cool, then eat & enjoy!
