Have you ever had a dream about food while you were sleeping?
I have – in fact, I had a dream about making this specific recipe.
I dreamed that I was cooking this specific stir fry – with this exact combination of seemingly strange ingredients. In my dream, the stir fry was so delicious that I could hardly contain myself with excitement…
I woke up from the dream feeling a little bit confused about why I had combined kale, chickpeas, cranberries, coconut, celery, onion and tahini together (like I said – a seemingly strange combination)… but I knew I had to give it a try in real life.
I wrote down the recipe, got all of the ingredients that I needed and gave it a go!
Honestly – at first I was a little bit unsure about what it would be like, but after my first bite I was hooked. I loved it so much and struggled to share it with my sister, who I had already promised half of it to. She also loved it!
This recipe is naturally dairy-free, gluten-free, grain-free, soy-free & sugar-free. It’s also full of healthy plant-based protein, healthy fats, good carbs and fiber.

A little sweet, a little savoury… and a whole lot of creamy, dreamy stir fry perfection!
Like I said… this chickpea, kale, cranberry & coconut stir fry is what dreams are made of!!!
Ingredients:
-3 cups kale (roughly chopped)
-1/2 can chickpeas (120g drained)
-1/2 onion
-3 sticks celery
-1/2 cup coconut flakes (unsweetened)
-1/2 cup dried cranberries (naturally sweetened, sulphate free)
-2 tablespoons cold-pressed macadamia nut oil (or coconut oil)
-3 tablespoons tahini
-pinch sea salt
(serves 2-4)
Instructions:
-rinse and roughly chop the kale
-finely chop the onion
-thinly slice the celery sticks
-drain and rinse the chickpeas
-sautee the chopped onion over a medium to medium-high heat together with the oil in a frying pan or a wok until it starts to brown or caramelise
-add the kale, celery and chickpeas to the pan and cook for a few minutes
-add sea salt to taste
-once almost cooked, add the dried cranberries & coconut flakes
-toss and cook for another minute or so
-remove the pan from the stove and stir in the tahini
-serve hot, eat and enjoy every bite!!!
