Cranberry, Walnut, Mint & Apple Christmas Salad
This is the ultimate Christmas salad!
Sweet, lightly sauteed apple rings with tangy cranberry sauce, fresh mint leaves and raw walnuts served on a bed of fresh, shredded baby spinach. YUM!
This delicious salad brings together all the festive flavors of Christmas… it is also super healthy! This recipe contains good plant-based protein, healthy fats & good carbs. It’s also refined sugar-free!

Ingredients (salad):
-16 to 20 fresh mint leaves
-2 large or 3 small apples
-1/2 cup raw walnuts
-1 teaspoon cold-pressed macadamia nut oil
-1 large handful fresh baby spinach
Ingredients (cranberry sauce):
-1 cup frozen cranberries
-2 teaspoons cold-pressed macadamia nut oil
-4 tablespoons 100% pure maple syrup
-1/2 teaspoon cinnamon
-1 cup filtered water
-pinch sea salt
(serves 2 as a meal & 4 as a table salad)
Instructions (salad):
-slice the apples horizontally through the core so that each slice is 1 cm thick
-cook the apple slices over a medium-high heat with 1 teaspoon of macadamia nut oil in a frying pan until soft and slightly caramelized
-chop the baby spinach
-toss the cooked apple rings, baby spinach, mint leaves & walnuts together in a bowl
Instructions (cranberry sauce):
-place the cup of frozen cranberries in a small sauce pot with the 2 teaspoons macadamia nut oil and pure maple syrup
-cook for 10 minutes over a medium-high heat (stir continuously, take care not to burn)
-after 10 minutes, remove the sauce pot from the stove and mash the cranberries with a potato masher
-add 1 cup of water to the pot and stir into the sauce
-add a pinch of salt & stir well
-serve the cranberry sauce in a little gravy boat/ sauce bowl
-drizzle over each salad when served
-serve fresh, eat & enjoy!
