Dairy-free Strawberry “Yoghurt” Recipe

Sometimes there is just nothing quite like yoghurt – and classic strawberry yoghurt has always been my favorite!

I have been following a dairy-free diet for the past decade or so (and really most of my life) and that has meant no milk, yoghurt or cheese for me. But anyone who knows me will know that I have always loved these things!

However, eating these foods is just not worth it for me – because dairy makes me really sick!

I’ve tried plenty of dairy-free yoghurt alternatives over the years including soy, almond and coconut products – but I have found that most of these store bought alternatives can be very high in sugar as well as processed ingredients. I’ve also decided to follow a soy-free diet – which does even harder.

And so – I decided to create my own homemade “yoghurt” recipe that is totally dairy-free, sugar-free, soy-free, plant-based, unprocessed, unrefined, natural and healthy!

This recipe contains healthy fats, good carbs and good plant-based protein too!

I love eating this “yoghurt” for breakfast – it’s pretty easy to make, it’s kind of like making a smoothie every morning.

I also thought I’d share my favorite ways to enjoy this “yoghurt” – this might give you some ideas!

Like I said, I love making this for breakfast or eating it as a snack or for dessert… or even for lunch (if my sweet tooth is acting up).

I love topping it this yoghurt with fresh blueberries or fresh banana slices and having it with raw nuts, seeds and granola.

I especially love sprinkling some of my mixed berry, nut and seed granola – I’m not sure if there could be a more perfect combo!

Ingredients:

-1 avocado
-1/3 raw cashew nuts (soaked 3 hours)
-2 cups sliced strawberries
-6 tablespoons unsweetened almond milk
-1 or 2 teaspoons ground vanilla powder/ pure vanilla extract
-4 teaspoons 100% pure maple syrup

(serves 1 or 2)

Suggested Toppings:

granola (I like using my mixed berry, nut & seed granola)

-raw nuts (almonds and pecan nuts are my favorite)

-seeds (I love pumpkin seeds and sunflower seeds)

-berries (blueberries and raspberries are perfect)

-fresh fruit (banana slices are yummy)

Instructions:

-soak the raw cashew nuts in room temperature water for 3 hours

-pit & peel the avocado

-slice the strawberries

-once soaked, blend the soaked cashew nuts, avocado, strawberries, almond milk, pure maple syrup and vanilla together until smooth (in a blender or food processor)

-chill the avocado & strawberries in the fridge before blending to make the “yoghurt” cold OR pop finished “yoghurt in the fridge for 30 minutes after blending to chill

-serve fresh and top with granola, nuts, seeds, berries or fruit (optional)

-eat & enjoy!
