Fried Egg, Banana & Avocado Stack

This fried egg, banana & avocado stack is my current breakfast obsession!

I love banana’s, I love avocado’s and I love eggs… and I love eating all of them for breakfast! I often find myself eating a boiled egg & a few slices of avocado with a banana on the side for a quick, healthy breakfast. Then the other day when I was about to make this go-to breakfast, I wondered what it would be like to fry the eggs, the banana and the avocado individually and make a breakfast stack… and of course, as usual, I had to try it straight away! I had fried eggs and banana before (obviously) but I had never tried to fry avocado and so I was very curious and also super excited (as always when making a new food creation)…

And that is how this fried egg, banana and avocado stack was created.

This delicious breakfast stack makes the perfect healthy breakfast (obviously) or brunch… and will be good for a quick lunch or dinner too (think “breakfast for dinner”) – it’s so yummy that I would eat it at any meal time!

This recipe makes a healthy & well balanced meal… it’s got good protein from the eggs, healthy fats from the avocado & eggs & coconut oil (used to fry), healthy carbs from the banana AND it’s packed with healthy minerals, vitamins and antioxidants.

YUM! Breakfast just got good… enjoy!

Ingredients:

-2 free-ranged eggs
-1 banana
-1/2 avocado
-1 or 2 teaspoons cold-pressed coconut oil
-tiny sprinkle of sea salt

Instructions:

-start by cracking the 2 eggs into a frying pan that has been greased with a little bit of coconut oil (half a teaspoon should be good) over a medium-high heat
-sprinkle a tiny pinch of sea salt over each egg
-fry the eggs however you like (soft, medium or well cooked) and flip them if you want to (sunny side up or sunny side down)
-when the eggs are cooked remove them from the pan
-peel, pit and slice the avocado into long thin slices
-place the avocado slices into a clean pan greased with a bit of coconut oil (half a teaspoon should do the trick again)
-fry the slices one the one side until they start to brown and then flip
-once cooked, remove from the pan
-peel the banana and cut into long, thin slices
-place the banana slices into a clean pan greased with a bit of coconut oil (about half a teaspoon)
-lightly fry the banana slices one the one side until they start to caramelise and then flip them, cooking the second side briefly (the banana will cook faster than the egg and avocado)
-serve the fried eggs on a plate, with the banana slices on top of the eggs & then add the avocado slices to the very top of the stack
-serve fresh & hot
-eat and enjoy every bite!

Helpful hint: A good quality non-stick frying pan really makes a world of difference when frying eggs and other things! I use a a good quality non-stick frying pan and so I don’t need to use much oil, if you do not have a non-stick frying pan you may want to use more coconut oil than recommended.
