Green Vegetable Soup
A healthy, simple and refreshing green vegetable soup.
Ideal for quick & easy, warm & cosy meals… or for cleansing, detoxing and weight loss!
This recipe is easy-to-make and free from dairy, sugar and any processed ingredients.
Ingredients:
-1 onion
-2 medium leeks
-500 grams zucchini’s
-200 grams broccoli
-300 grams cauliflower
-200 grams baby spinach
-250 grams petit pois peas
-1 tablespoon cold-pressed macadamia nut oil
-2 teaspoons oregano
-1 teaspoon dried sweet basil
-sea salt (to taste)
-cracked black pepper (to taste)
-4 cups filtered water
Instructions:
-rinse all fresh ingredients
-peel and chop the onion
-sautee the onion with the macadamia nut oil in a soup pot until caramelized starting to brown (this is an important step for overall soup flavor)
-chop the leaks
-add the water and the leaks to the pot
-bring the water to a boil and then turn the temperature down to simmer the soup
-chop the zucchini’s, broccoli and cauliflower & add them to the pot
-add the oregano and the sweet basil to the soup
-simmer for 20-30 minutes
-add peas and cook for another 10 minutes
-add baby spinach leaves and cook for 2 minutes
-pour soup into a blender and puree until completely smooth (depending on the size of your blender, you may have to divide the soup into sections to blend)
-add sea salt and cracked black pepper to taste
-serve and enjoy
Serving suggestions:
-Serve hot with raw almonds (chopped or whole) and a small drizzle of any cold-pressed oil that you like (macadamia, sesame, etc.)
-Serve hot and top with with fresh avocado slices and raw almonds (chopped or whole)
