Healthy Blueberry & Banana Muffins (grain-free, gluten-free, sugar-free)
Delicious blueberry & banana muffins made grain-free, gluten-free, sugar-free, dairy-free and completely healthy!
These healthy blueberry & banana muffins are perfect for you to add to your breakfast or brunch and can be enjoyed as a fun snack or treat any time of the day.
Ingredients:
-1/4 cup coconut flour
-1/4 cup almond flour
-1/2 cup desiccated coconut
-1/2 cup blueberries
-2 ripe bananas
-3 eggs (separated)
-5 tablespoons cold-pressed coconut oil
-1 teaspoon ground vanilla powder
-1 teaspoon cinnamon
-small pinch nutmeg
-small pinch sea salt
Instructions:
-preheat oven to 180 degree’s Celsius (360 F)
-separate eggs and beat the egg whites with an electric beater until they are firm & stiff
-mash the bananas until well blended
-melt the coconut oil
-in a bowl, mix the bananas with the coconut oil, egg yolks, coconut flour, almond flour, desiccated coconut, vanilla powder, cinnamon, nutmeg and sea salt until well blended
-add the blueberries and mix in evenly
-gently fold the egg whites into the cake batter until blended (but do not mix)
-place muffin papers into muffin trays
-gently spoon muffin mix into the papers until full (muffins won’t rise)
-bake in the oven for 8-20 minutes at 180 degree’s Celsius (depending on the size of muffin paper and pan used)
-muffins are ready when you can slide a sharp knife into the muffin and no batter sticks to it
-remove from oven when ready and let cool
-serve, eat and enjoy
-store in an airtight container, in a cool place
