MY HEALTHY CRISPY ROASTED POTATO RECIPE
I just love super crispy roasted potatoes! My family and I always make potatoes like this for Sunday lunch, Christmas dinner, or for any other special occasion to go with my healthy roasted chicken recipe, oven roasted vegetables, salad, brown rice and various side dishes.
But these roasted potatoes are super versatile, and can be served with tons of different sides and main dishes!
I try to make this recipe a bit healthier, using a good cooking oil and natural flavorings. This recipe is gluten, wheat, dairy and refined sugar free.

THE RECIPE
Ingredients:
-10 or 12 potatoes (or as needed)
-4 to 5 Tablespoons white balsamic vinegar (or as needed, dependent on potato quantity)
-Sea salt
-Black pepper
-3 or 4 teaspoons onion powder
-1 Tablespoon of *cooking oil (or as needed, dependent on potato quantity)
(SERVES 6-12 PEOPLE, adjust quantity as needed)
*I use macadamia oil, you can use another healthy cooking oil
THE METHOD
Instructions:
Preheat oven to 180 C/ 360 F
To make my super crispy healthy roasted potatoes, I use a whole lot of potatoes
I do about 10 or 12 or so potatoes for my whole family (for Christmas dinner for example) and peel and halve or quarter them as needed
My secret essential ingredients for super crispy flavorful roasted potatoes is white balsamic vinegar
It’s very important and it gets the flavor right into the potatoes (while they cook)
Add according to how many potatoes you do, but I add a few Tablespoons (4 or 5, or as needed)
Add some sea salt and black pepper to the potatoes too
And then add some onion powder (the other most important ingredient), a few teaspoons or as needed (to go with the amount of potatoes used, I use about 3 or 4 teaspoons)
And then also about a Tablespoon of cooking oil (or as needed)
Cover the potatoes in those ingredients in a baking dish, toss together and roast them for about 60 minutes or so to get them super crispy on the outside and soft on the outside
Serve with roasted chicken, brown rice, roasted vegetables, salad – or whatever meal you prefer!
