Healthy Peanut Butter Cookies (gluten-free, grain-free, sugar-free, dairy-free)

Super yummy, soft and chewy peanut butter cookies that are grain-free & gluten-free as well as refined sugar-free and dairy-free.

Totally healthy and delicious? It’s just too good to be true!

These cookies were created to be enjoyed as a nutritious treat or a tasty snack… and they are simply AMAZING when dunked into a glass of fresh almond milk… but are perfect when enjoyed on their own.

They make great lunchbox treats and are also ideal for quick bites on-the-go.

What You’ll Need

Ingredients:

-1 cup crunchy peanut butter (unsweetened with no added salt)
-1/3 cup almond flour
-3 tablespoons coconut flour
-6 to 8 tablespoons 100% pure maple syrup (depending on how sweet you like them)
-6 tablespoons cold-pressed coconut oil
-2 large free-ranged eggs
-1 teaspoon ground vanilla powder
-1 teaspoon cinnamon
-pinch of sea salt

(makes 20-30 cookies)


The Method

Instructions:

-preheat oven to 180 degree’s Celsius (360 F)

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-in a bowl mix the peanut butter, almond flour, coconut flour, eggs, pure maple syrup, vanilla powder, cinnamon and sea salt together

-add the melted coconut oil to the batter and mix until well blended

-grease a baking tray with some extra coconut oil

-spoon cookie batter onto the baking tray in small portions and shape cookies (I like to make each cookie roughly 1.5cm thick and 4cm wide), leaving a little space between the cookies (they will rise and expand slightly)

-bake for 10 to 15 minutes (I usually do 12 minutes) depending on whether you like your cookies softer or baked for longer (please note that this is a soft & chewy cookie recipe)

-once baked to satisfaction, leave to cool for 30 minutes and then serve

Serving suggestions:

-dunk cookies into a glass of fresh almond milk (amazing!)

-or eat & enjoy cookies on their own

-to store: leave to cool completely and then keep fresh in an airtight container
