How to Make Healthy Nachos (gluten-free, dairy-free)

THE RECIPE FOR HEALTHY NACHOS

Guilt-free nachos that make you feel as good as they taste

I’ve always loved making nachos, I’ve been making them ever since I was a little girl. I always loved making spaghetti bolognese and nachos – these were my 2 faves!

To be honest though, I never liked the way that my mom cooked ground beef (her other recipes are amazing though) – and so I used to put myself in charge of cooking the meat every time we made nachos and spaghetti bolognese.

The most important part of making nachos, is getting the meat recipe right – and of course the toppings too – but the meat recipe has to be good, or else the whole thing flops!

I’m also allergic to dairy, and so getting creative with nacho toppings (without the cheese) was something that I had to do. Below I’ve listed some of my fave nacho toppings, but you can add some cheese too if you’d like to (I recommend grated or melted white cheddar cheese, or cashew nut cream cheese as a dairy alternative).

This recipe is gluten-free, dairy-free and 100% healthy (and guilt-free). It also contains good protein, healthy fats and good carbs!

ALL ABOUT THE TOPPINGS

Suggested toppings:

-chopped cherry tomatoes

-chopped bell pepper

-smashed avocado or guacamole

-chopped tomato and onion mix

-finely sliced onions

THE RECIPE

Ingredients (meat recipe):

-1 teaspoon oil (macadamia or olive)
-1/2 to 1 chopped onion
-2 cups chopped cherry tomatoes
-150g tomato paste
-juice from 1/2 to 1 lemon
-500g extra lean ground grass-fed beef
-1/4 to 1/2 teaspoon chilli powder (or to taste)
-1/2 teaspoon cumin powder
-1/8 to 1/8 teaspoon cayenne pepper (or to taste)
-garlic to taste (optional)
-sea salt and black pepper to taste

(meat recipe serves 4 to 8)

Ingredients (guacamole):

-2 or 3 medium ripe avocados
-1/2 finely chopped onion
-1 to 3 Tablespoons fresh lemon juice
-1 finely chopped tomato (or a handful of cherry tomatoes)
-sea salt and black pepper to taste
-fresh garlic to taste (optional)

(guacamole serves 4 to 8)

Nacho Essentials:

-tortilla chips (I like to use 100% wholegrain corn tortilla chips)

THE METHOD

Instructions (meat recipe):

-sautee the chopped onion in a pan with 1 teaspoon oil until caramelized and brown (this will give it flavor)
-optional: add garlic to taste
-add chopped cherry tomatoes to the pan
-add the tomato paste, fresh lemon juice, chilli powder, cumin powder and cayenne pepper to the pan and mix
-add the lean ground grass-fed beef to the pan and mix
-simmer the meat on the stove for 15-30 minutes and stir consistently
-sea salt and black pepper to taste

(meat recipe serves 4 to 8)

Instructions (guacamole):

-smash the avocados with the back of a fork
-finely chop the onion and tomato
-mix the smashed avocado, chopped onion and chopped onion and 1 to 3 Tablespoons of fresh lemon juice
-add sea salt and black pepper to taste, and mix together
-mince and add fresh garlic to taste (optional)

How to put it all together:

-serve some tortilla chips with a portion of nacho meat, guacamole (or smashed avocado), chopped cherry tomatoes, chopped bell pepper and fresh onion slices (optional)
-eat and enjoy!
