LENTIL & MUSHROOM ZUCCHINI NOODLES

A super healthy and cosy noodle inspired dinner recipe

If you’ve been following me on YouTube for a while, you may have noticed that I love spaghetti, spaghetti bolognese and any kind of bolognese or noodle related recipe. Spaghetti has always been one of my favorite food items!

So this has been my latest noodle related recipe creation in the kitchen. I love using spiralized zucchini to make “zoodles” (aka zucchini noodles), and they go perfectly with this easy-to-make lentil and mushroom bolognese.

This recipe is dairy-free, gluten free and plant-based – as well as being full of protein!

RECIPE

INGREDIENTS:

-2 cups pre-cooked lentils
-1 cup sliced button mushrooms
-1 cup chopped cherry tomatoes
-1/2 medium red bell pepper
-1/2 onion
-squeeze lime or lemon juice
-1 to 2 teaspoons dried oregano
-1 teaspoon onion powder
-salt and pepper
-2 cups spiralized zucchini
-2 Tablespoons nutritional yeast (optional)
(serves 2)



METHOD

DIRECTIONS:

-I start by chopping up about 1/2 an onion, and add that to a pan with some avocado cooking oil spray (you can use ay type you prefer)

-I like to get that caramelised on the stove first, before I add the other ingredients

-Then I chop up 1/2 a red bell pepper (a small to medium sized one), with 1 cup of cherry tomatoes and some button mushrooms (1 cup sliced)

-Once the onions are a bit caramelised, I add the other veggies to the pan (the bell pepper, the tomatoes and the button mushrooms)

-I then add about 2 cups pre-cooked lentils to the mix (you can cook these yourself and save them for meal prep like I did, or use pre cooked), as well as lime/ lemon juice and some spices for flavour (1 teaspoon of onion powder, 1 to 2 teaspoons of dried oregano, and some salt and pepper)

-All of this doesn’t take long, and once it’s all in the pan together it cooks very quickly

-I like to serve this with zucchini noodles (which is spiralized zucchini, aka “zoodles”), to heat the “zoodles” up I like to microwave them or steam them quickly

-Once everything is ready, I serve the zucchini noodles (about 1 cup per serving) with the lentil bolognese mix

-I serve half of the bolognese with the cooked zoodles, and then on top that with a heaped tablespoon of nutritional yeast (optional, it has a slight cheesy taste which I love)

-So thats one of my current favourite dinners, and it always makes me feel very healthy!
