Mixed Vegetable & Beef Stew
A mixed vegetable and beef stew recipe that is simple, fuss-free, full of flavor, nutritious and can easily be prepared as a meal for the whole family!
This recipe is free from grains, sugar, dairy and is completely unprocessed.
I love making this stew on a chilly day. It is warm, hearty, nourishing for the body and really yummy!
Ingredients (serves 4-6):
-500 grams beef cubes (organic and free ranged)
-6 medium tomatoes
-4 large medium-large carrots
-3 large potatoes
-1 large butternut squash
-1 medium onion
-120 grams pure tomato paste (unsweetened and preservative/ additive free)
-a few squeezes of fresh lemon juice
-1 teaspoon oil
-1/4 to 1/2 teaspoon dried rosemary
-1/4 to 1/2 teaspoon dried thyme
-1/4 to 1/2 teaspoon oregano
-1/8 to 1/4 ginger powder
-sea salt
-cracked pepper
-3 to 5 cups pure water
Suggested toppings (per serving):
-5 to 10 small, fresh basil leaves
-1/4 avocado
Instructions:
(Total time: About 2 hours)
-chop and sautee the onion with the oil in a pan until it caramelises (this will give the stew flavour)
-place the beef cubes with the tomato paste in a large pot over a medium-high heat with 2 cups of pure water
-roughly chop the tomatoes and add to the pot
-leave it to cook for about 10 minutes
-add the rosemary, thyme, oregano and ginger to the mix
-peel and shop the carrots and potatoes and add to the stew
-peel the butternut squash, remove the seeds, chop and add to the pot
-leave all of the ingredients to simmer over a medium heat for about an hour (slowly add another 2 cups of water and stir occassionally)
-add salt and cracked pepper (to taste)
-add a few squeezes of fresh lemon juice (to taste)
-can cook for up to another hour or until the beef and vegetables have turned soft (add more water whenever it is needed)
To serve:
-serve each portion with avocado slices and garnish with fresh basil leaves
-eat and enjoy!
