My coconut milk chia pudding recipe
This is my favorite chia pudding recipe! It’s so easy to make, it’s dairy-free and plant-based.
I love it with fresh raspberries – it makes a perfect breakfast, snack or healthy dessert!

MY RECIPE
Ingredients:
- 1 can light coconut milk (400ml)
- 1/2 cup chia seeds
- 2 tsp to 2 tbsp maple syrup (or as needed)
- 1/2 to 1 tsp vanilla extract
How to:
- Mix all of the ingredients together in a bowl/ jar
- Let sit for 5 minutes to thicken up, then stir again
- Cover bowl or jar with an airtight lid, or serve between smaller jars with airtight lids
- Store in the fridge overnight before eating, then for up to 3-6 days
- Serve chilled with berries, fruit and nuts (optional)
