Nectarine, Basil & Balsamic Salad
If you have ever believed that healthy salads are boring, then this salad that will change your mind. It is sweet, savory, tangy and full of flavor as well as being healthy, sugar-free, vegan and Paleo approved.
Sweet nectarine slices, fresh basil leaves, pumpkin seeds and colorful edible flowers on a bed of mixed leafy greens; drizzled with a delicious balsamic dressing that brings all of the unique and interesting flavors together perfectly.
-2 medium ripe nectarines
-10 to 15 small, fresh basil leaves
-1 tablespoon raw pumpkin seeds
-a few edible flowers of choice (optional)
-a small handful micro greens (optional)
-a small handful fresh arugula leaves (rocket)
-a big handful of mixed leafy greens such as baby spinach, romaine lettuce and mixed lettuce
-2 teaspoons cold-pressed olive oil
-1 tablespoon balsamic vinegar (organic, unsweetened and preservative free)
-a squeeze of fresh lemon juice
-rinse the nectarines, the leafy greens, the basil leaves and arugula
-add the fresh leafy greens (baby spinach, mixed lettuce, romaine, arugula) to a plate or a bowl
-slice the nectarines and remove the pit, then add to the salad
-add the basil leaves and the pumpkin seeds to the salad
-garnish the salad with the edible flowers and micro greens (optional)
-get ready to prepare the dressing
-in a small bowl mix the olive oil, the balsamic vinegar and the lemon juice until well blended
-add sea salt and cracked pepper (to taste) and mix again
-drizzle over salad
