Peanut Butter, Coconut & Oat Bites

Peanut butter, coconut and oats… is there a better combination for a healthy snack?

I love making these little energy bites to keep for hungry moments between meals, quick snacks, breakfasts on-the-go and healthy treats! I really love peanut butter (I have a bit of an obsession with it – who is with me?) and let’s just be honest here… coconut makes everything better… and oatmeal, well just check out the oatmeal section of the blog and you’ll see how much I love anything involving oats.

These little delights are amazingly delish and they’re packed with plenty of healthy nutrients. They’re also well balanced with healthy essential fats, healthy plant-based protein and good carbs! They’ll give you a good boost of sustained energy!

AND they are 100% refined sugar-free, gluten-free, dairy-free & raw vegan. Therefore there’s no need to enjoy responsibly… indulge in every bite of these peanut butter, coconut & oat bites!

Ingredients:

-1 cup smooth peanut butter (unsweetened)
-2 cups dry rolled oats
-1 cup desiccated coconut
-3 to 4 flat tablespoons cold-pressed coconut oil (melted)
-1/4 cup 100% pure maple syrup
-2 teaspoons ground vanilla powder/ pure vanilla extract
-1/2 to 1 teaspoon cinnamon

(makes about 30 bites – roughly 110 calories per bite)

Serving size: 2 bites

Instructions:

-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt

-in a bowl mix together the peanut butter, rolled oats, melted coconut oil, pure maple syrup, desiccated coconut, vanilla and cinnamon

-once the batter is really well mixed, spoon out a heaped tablespoon amount at a time and press the mixture firmly together in your hands to form a basic shape

-once pressed together, gently roll the shape between your palms to form a ball, then place on a tray lined with parchment paper

-once all of the bites have been pressed & gently rolled, place tray into the fridge and leave to set for an hour or two

-munch, nibble, eat & enjoy!

-store in the fridge in an airtight container to keep fresh
