Pecan & Oat Shortbread Cookies (gluten-free, sugar-free, dairy-free)

WARNING: VERY MORE-ISH

Okay these pecan & oat shortbread cookies are insanely more-ish (you will want to eat more) – don’t say I didn’t warn you!

I love a good cookie – but I often find that store bought gluten-free cookies are dry and the texture is usually weird… so I’m not really a big fan of buying cookies. I prefer to just make my own cookies at home.


A MOMENT OF INSPIRATION

The other day I bought this huge bag of pecan nuts (it seemed like a great idea at the time) but then I was like “what am I going to do with all of these pecan nuts?”

…I had also been craving cookies (you know what that’s like) and so I decided to combine some of the pecan nuts with one of my favorite ingredients ever – oats!

Initially I was going to make simple oat cookies with chopped pecan nut pieces in them… but then I thought “why not make pecan flour to mix into the batter?”. I had no idea what it would be like – but I often bake with almond flour, so that’s kind of a similar idea. I discovered that pecan nuts are a bit different to almonds when ground… the flour is almost light & fluffy (really yummy).

Anyway, I gave it a go with the pecan flour and the oats… and oh my gosh – these cookies are amazing! I decided straight away that they are just like shortbread cookies. The pecan nuts and the oats combined together really give these gluten-free cookies the perfect texture.

Ps. This recipe is totally gluten, dairy & sugar-free. It’s also free from any processed ingredients – and it contains good carbs, healthy fats and protein. So… yes they make the perfect healthy snack!

THE RECIPE

Ingredients:
1 + 3/4 cups oat flour
1 cup raw pecans (ground)
3/4 cups coconut sugar
1/2 cup coconut oil (melted)
1 egg
1/2 teaspoon cinnamon
1 teaspoon ground vanilla powder (optional)
pinch sea salt

(makes 25 cookies)

THE METHOD

Instructions:
-Preheat your oven to 180 degrees C/ 360 degrees F
-Melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water, then place the coconut oil into the small bowl and wait for it to melt
-Blend the pecan nuts until it becomes flour
-Mix the pecan flour, oat flour, melted coconut oil, coconut sugar, egg, vanilla, cinnamon and sea salt together until it becomes cookie dough
-Take tablespoon amounts of the dough and roll into balls with your hands
-Grease an oven tray and press the cookie dough balls onto the tray
-Bake for roughly 10-12 minutes
-Leave to cool, then eat & enjoy!
-Store cookies in an airtight container to keep fresh
