Pistachio, Cranberry & Almond Chocolate Bark

Pistachio, cranberry, almond and chocolate… is there a better combination?

This is my favorite way to make chocolate bark – every bite feels like Christmas!

This recipe is 100% refined sugar-free, dairy-free & soy-free! It also contains healthy essential fats, good plant-based protein and healthy carbs.
This chocolate will make you feel happy AND it will make your body happy!

A few years ago I had never heard of chocolate bark before… can you believe it? I tried chocolate bark for the first time when I moved to the United States & lived there for 2 years. I didn’t want to try it at first because I thought it had something to do with tree bark (I know – it sounds so silly) but then I finally had a bite and I was hooked! It’s the perfect holiday treat! Now I like to make it every year during the festive season… and this is my favorite way to make it!

Ingredients:

-12 tablespoons cacao powder
-8 tablespoons cold-pressed coconut oil (melted)
-16 tablespoons cacao butter (melted – about 100g)
-8 to 12 teaspoons 100% pure maple syrup (to taste)
-1 teaspoon ground vanilla powder/ pure vanilla extract
-1 teaspoon cinnamon
-1/2 cup raw pistachio nuts (shells removed)
-1/2 cup dried cranberries (sweetened with pure fruit juice. sulphate free)
-1/2 cup silvered almonds
-pinch sea salt

Instructions:

-melt the cacao butter and the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the cacao butter and coconut oil into the small bowl and wait for them to melt / use separate bowls for each one

-once melted, measure the melted cacao butter and the coconut oil out in tablespoons and pour them into a mixing bowl

-using a sieve (to remove any lumps), add the cacao powder to the bowl and mix until smooth

-add the pure maple syrup, the sea salt, the vanilla and the cinnamon to the chocolate mixture and mix until well blended

-mix the pistachio nuts, dried cranberries & silvered almonds into the chocolate

-pour the chocolate onto a flat tray that has been lined with parchment or wax paper

-spread the chocolate out evenly over the tray with the back of a spoon

-place the chocolate bark into the fridge to set for 30 to 60 minutes

-once set, cut or break the chocolate bark into big pieces

-eat, share & enjoy every bite!

-store in an airtight container in the fridge to keep fresh
