Raw Chocolate Fridge Cake (dairy-free, sugar-free, grain-free, gluten-free)
Just one slice of this and you will never want to eat unhealthy cake again! A mouth-watering cake that is healthy, unprocessed and raw as well as completely plant-based (vegan and Paleo approved).
This delicious cake is grain-free (therefore gluten-free too), refined sugar-free, dairy free and it also contains healthy fats and protein.
It is really easy to make! It can be prepared in just 20 minutes and then left in the fridge for an hour to set.
Ingredients (cake):
-3 tablespoons coconut flour
-4 tablespoons almond flour
-5 tablespoons coconut oil
-6 tablespoons cacao (raw cocoa)
-5 tablespoons 100% pure maple syrup
-5 tablespoons desiccated coconut
-2 cups pitted, chopped dried dates
-4 tablespoons chia seeds
-2 small or 1 large avocado
-1/2 teaspoon raw ground vanilla
-1/2 teaspoon cinnamon
-pinch of sea salt
Ingredients (frosting):
-4 tablespoons coconut oil
-4 tablespoons cacao (raw cocoa)
-2 tablespoons agave
-pinch of sea salt
-1/2 teaspoon raw ground vanilla
-1/4 teaspoon cinnamon
Instructions (cake):
-finely chop the dried dates, enough to fill 2 cups
-melt the coconut oil so that it is soft but not liquid
-peel, pit and blend the avocado until smooth
-mix the coconut flour, almond flour, desiccated coconut, chia seeds, cacao powder, sea salt, ground vanilla powder and cinnamon together in a bowl
-in another bowl mix your melted coconut oil, blended avocado and pure maple syrup
-add the ingredients from the two bowls together and mix well
-add the chopped dates to the mixture
-mix the cake batter together with your hands
-place the cake batter “dough” on a piece of wax paper, on top of a flat tray
-push the cake dough into desired shape and pat it flat onto the tray (I make a standard round cake shape)- the dough is very easy to shape
-once happy with the cake shape, place it in the fridge and leave it to set while you prepare the frosting
Instructions (frosting):
-melt the coconut oil so that it is soft but not liquid
-mix the cacao, agave, sea salt, ground vanilla powder and add it to the coconut oil
-mix well
-remove your raw chocolate cake from the fridge and frost it with a butter knife
-decorate cake with chopped almonds, desiccated coconut or coconut flakes (optional)
-place the iced cake bake back into the fridge and leave for an hour (or more) to set
-once the cake has set, remove from wax paper (with cake lift/ flat metal spatula) and place on plate or cake dish
-serve, eat and enjoy!
