A savory blueberry stir fry that is both slightly sweet and savory – while still light & refreshing.
Perfect for an easy lunch or dinner.
-1/2 cup blueberries
-1 handful baby spinach
-half a baby cabbage
-1 teaspoon macadamia nut oil
-pinch sea salt
-2 tablespoons raw almonds
-chop the onion and the almonds and add them to a pan with the macadamia nut oil (medium heat)
-sautee until caramelized and toasted
-chop the zucchini, baby spinach and baby cabbage and add to the pan
-add a pinch of sea salt to the mix
-when the mix is almost ready, add the blueberries to the pan
