Sweet Omelette Obsessed
Just top it off with a bit of fruit, coconut flakes, cinnamon and nut butter
I love omelettes – you know, the savoury kind – but sometimes there is nothing quite like a sweet omelette! The basic idea of the sweet omelette (in case you are new to the concept), is that you top (or fill) your omelette with sweet foods instead of savoury foods.
In a savoury omelette, I would usually go for some sauteed mushrooms, tomato, zucchini and avocado – but when I go for a sweet omelette, I love berries or banana slices with drizzles of nut butter, cinnamon and coconut.
I love omelettes, because they are delish and they also provide great protein and healthy fats. Adding vegetables (to make a savoury omelette) or fruit (to make it sweet) will give me some healthy carbs to balance the meal.
This is one of my favorite ways to enjoy a sweet omelette! I hope you love it as much as I do!

This recipe is totally healthy, it’s also 100% dairy-free, gluten-free and sugar-free. Perfect for a cheeky breakfast.
-1 teaspoon coconut or macadamia oil
-1 medium banana
-1 to 3 teaspoons nut butter (macadamia, almond, cashew or peanut)
-1 to 3 teaspoons desiccated coconut (or coconut flakes)
-1 teaspoon raw honey/ 100% pure maple syrup
-sprinkle of cinnamon
-chopped raw pecan nuts or raw walnuts (about 5-10 halves)
-tiny pinch sea salt (optional)
-whisk the eggs together until well blended with a teeny tiny pinch of sea salt
-pour the whisked eggs into a heated pan that has been greased with 1 teaspoon oil
-once the one side is cooked, flip with a spatula and cook the second side
-please note that it’s always easiest to make an omelette with a good quality non-stick frying pan, but it is possible to make without a non-stick pan
-serve the cooked omelette on a plate
-fill or top the cooked omelette with fresh banana slices, nut butter, raw honey, chopped nuts & coconut flakes
-sprinkle with cinnamon
-serve & enjoy every bite!
