Balsamic Roasted Chickpeas
Delicious oven roasted balsamic chickpeas that are great for a healthy snack or for adding some yummy flavor to a salad.
This recipe uses healthy oil that is ideal for roasting with balsamic vinegar, mustard powder and a little cayenne pepper for a flavorful and ever-so-slightly spicy bite.
-2 cans fully cooked chickpeas, in water
-5 tablespoons balsamic vinegar (unsweetened & sulfate free)
-3 tablespoons cold-pressed macadamia nut oil
-1/2 teaspoon mustard powder
-pinch of cayenne pepper powder
-sea salt (to taste)
-cracked black pepper (to taste)
-preheat the oven to 200 degree’s Celsius (400 F)
-drain and rinse the chickpeas and place on a baking tray
-drizzle the macadamia nut oil and balsamic vinegar over the chickpeas and mix
-sprinkle the mustard powder, cayenne pepper, sea salt & cracked pepper over the chickpeas
-toss the chickpeas so that they are all covered equally with the flavoring
-place in the oven and roast for 30 to 40 minutes, removing from the oven every 10 minutes or so to toss
-once the chickpeas are roasted to your satisfaction, you can remove them from the oven and leave to cool for a few minutes
