Banana, Flax & Almond Overnight Oats

A creamy banana, flax & almond porridge that prepares itself while you’re sleeping! No I’m not playing with you, overnight oats are really that easy to make!!! All that you need to do is mix a couple of ingredients together in a jar and leave them to soak overnight while you are sleeping… and when you wake up your healthy breakfast will be ready and waiting for you! Life just got so much easier!

If you have been following my blog for a while, you will know that I love overnight oats and anything oat related. I also really love banana’s and so I’m loving this flavor combo… I like to make breakfast exciting – you can check out my other oatmeal recipes here.

This recipe is healthy, refined sugar-free, dairy-free, gluten-free, raw vegan AND it’s a well balanced meal complete with healthy essential fats, good plant-based protein and healthy carbs.

Why are soaked oats better than cooked oats?

Soaked grains are easier to digest when soaked and therefore the nutrients in them are more easily absorbed.

Because… when you soak (culture) grains, the antinutrients, phytates and hard-to-digest parts in the grains are broken down.

Why flax seeds and oats?

I like to add flax seeds to my oats pre-soak because they are full of healthy fats & protein and are so delicious when soaked. Seeds are also easier to digest when soaked just like grains.

Here’s what I use…

Ingredients:

-1 banana
-1/2 cup rolled oats
-1/2 cup water
-2 teaspoons flax seeds
-2 teaspoons almond butter
-1/2 teaspoon ground vanilla powder/ pure vanilla extract
-1/2 teaspoon cinnamon

I also like to sprinkle a few raw almonds on top…

Suggested topping:

-10 to 20 raw almonds

Here’s how I make my banana, flax & almond oats…

Instructions:

-peel & smash the banana with the back of a fork

-mix the oats, water, smashed banana, flax seeds, almond butter, vanilla & cinnamon together in a jar

-place a lid on the jar and pop into the fridge to soak overnight (at least 8 hours)

-once soaked, serve in a bowl and top with raw almonds (optional)

-eat and enjoy!

How to eat overnight oats:

-eat out of the jar with a spoon

-serve in a bowl

-pop the sealed jar into your bag with a spoon and eat on-the-go

-warm soaked oats on the stove in a pot (like you would cook regular oats) for a few minutes until heated
