Christmas Oatmeal
This is the ultimate Christmas breakfast. I have been absolutely LOVING this Christmas Oatmeal this entire festive season and can’t wait to have a big bowl of it on Christmas morning!
Oatmeal porridge is so cosy, warm & comforting and can be deliciously nutritious too.
This special Christmas porridge is refined sugar-free, dairy-free, gluten-free & soy-free AND it’s also a healthy, well balanced breakfast. This recipe contains healthy essential fats, healthy plant-based protein and good carbs.
It’s perfect to enjoy during the festive season or throughout the year (it’s never too late or too early to enjoy a little taste of Christmas), I hope that you love it as much as I do because I love it a lot!

Ingredients:
-1/2 cup rolled oats
-1 + 1/2 cups water
-1/4 cup dried cranberries
-1/8 cup raw pecan nuts or walnuts (chopped)
-1/8 cup silvered almonds
-2 tablespoons desiccated coconut or coconut flakes
-1 teaspoon cold-pressed coconut oil
-1 teaspoon unsweetened nut butter
-1 teaspoon cinnamon
-1 teaspoon ground vanilla powder/ pure vanilla extract
-1 or 2 teaspoons 100% pure maple syrup (or to taste)
(serves 1)
Instructions:
-bring the dry oats and water to a boil on the stove and then simmer on a low temperature for 10-15 minutes, stirring occasionally until fully cooked
-once cooked, remove oats from the stove and add the coconut oil, nut butter, vanilla, cinnamon, coconut, silvered almonds, dried cranberries & chopped nuts
-stir all ingredients into the oats until well blended
-add pure maple syrup to taste
-serve hot in a bowl
-eat & enjoy every spoonful of that delicious Christmasy flavor!
