Cranberry, Pecan & Maple White Chocolate (dairy-free, sugar-free, soy-free)
Mouth-watering, dairy-free maple white chocolate with dried cranberries, chopped pecan nuts, almond flakes and a sprinkle of cinnamon. The perfect, healthy, unrefined holiday treat!
Ingredients:
-50 g cacao butter (raw, cold-pressed cocoa butter)
-4 tablespoons cold-pressed coconut oil
-5 tablespoons 100% pure maple syrup
-1 teaspoon cinnamon
-1/2 teaspoon raw ground vanilla
-3 tablespoons chopped, raw pecans
-1/3 cup sliced almonds
-1/3 cup dried cranberries (sulfate free, sweetened with pure pineapple juice)
-pinch of sea salt
Instructions:
-melt the cacao butter and the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the cacao butter and coconut oil into the small bowl and wait for them to melt.
-in another bowl, mix the dried cranberries, pecans, almonds, cinnamon, sea salt and vanilla
– then add the maple syrup, the melted coconut oil and the cacao butter
-mix all the ingredients together well
-pour the chocolate mix evenly into molds or empty ice trays
-place into the fridge and wait for the chocolates to set
-most of the maple syrup will naturally fall to the bottom of the molds while setting in the fridge but this makes the treats layered and even more fun & delicious
-once set, remove chocolates and pop them out of the molds
-serve, eat and enjoy
-keep stored in the fridge with the maple layer faced upwards. Remove from fridge 2 minutes before serving
