Creamy Peanut Butter Oats (gluten-free, sugar-free, soy-free)
Creamy Peanut Butter Oats… is perhaps the perfect breakfast, let me tell you why!
Well, where do I start? I LOVE peanut butter (it’s one of my favorite things) and I know that most other people love peanut butter too. This recipe contains lots of healthy protein (from the peanut butter), healthy fats (coconut oil, peanut butter) and good carbs (oats, peanut butter, pure maple syrup). It’s a well-balanced, healthy meal! There’s also lots of other healthy nutrients found in the ingredients like cinnamon and vanilla.
This recipe is healthy, balanced, gluten-free, refined sugar-free, dairy-free, soy-free AND totally creamy, peanut-buttery & delicious! It’s basically a treat for breakfast!
Ingredients:
-1/2 cup dry rolled oats
-1 and 1/2 cup water
-2 tablespoons peanut butter (crunchy or smooth, unsweetened)
-1 teaspoon cold-pressed coconut oil
-1/2 teaspoon cinnamon
-1 teaspoon ground vanilla powder/ pure extract
-4 teaspoons 100% pure maple syrup
Topping:
-1 or 2 teaspoons peanut butter (crunchy or smooth, unsweetened)
-totally optional: a few dry roasted peanuts (oil & salt-free)
Instructions:
-bring the dry oats and water to a boil on the stove and then simmer on a low temperature for 10-15 minutes, stirring occasionally until fully cooked
-once cooked, remove oats from the stove and add the coconut oil, peanut butter, vanilla, cinnamon and pure maple syrup to the pot
-stir all ingredients into the oats until well blended
-serve in a bowl and top with 1 or 2 teaspoons of additional peanut butter
-eat & enjoy!
