Easy Oat & Chia Bread (gluten-free, dairy-free)
The easiest bread recipe ever
This easy oat & chia bread recipe is my current obsession at the moment. I’ve never had such an easy bread recipe. Absolutely loving it!
For this recipe, all that you have to do is mix the ingredients together and bake – there’s no need to kneed the dough or anything!
I’ve been making a similar bread for a while (with mixed nuts and seeds) that I actually haven’t yet shared on the blog – but this is a simpler version of that one. I love the idea (and taste) of just oats and chia seeds – it’s so simple and nourishing. Oats are a great source of carbs, and chia seeds are full of healthy fats and high in plant-based protein.
This recipe is gluten-free, dairy-free, sugar-free and plant-based. It’s also full of good carbs, healthy fats and good protein.

Ps. Please excuse the “skinny” looking slices. Lol! I need to get a smaller bread pan – the one that I am currently using is huge and makes the bread flat and wide.
Suggested Toppings
aka my favorite ways to eat this bread
– nut butter (almond, peanut and macadamia are my faves)
– fresh avocado slices with sea salt and black pepper
– cashew nut cheese (or another cheese) with tomato, sea salt and black pepper
– tahini, Kalamata olives, cherry tomatoes, baby spinach
– healthy Nutella (try my easy one serving recipe)
-soft poached eggs with fresh arugula, sea salt and black pepper
The Easy Recipe
Ingredients:
-2 cups rolled oats
-1/2 cup chia seeds
-5 Tablespoons psyllium husks
-1 teaspoon sea salt
-1 Tablespoon 100% pure maple syrup (can also use raw honey)
-4 Tablespoons melted coconut oil
-2 cups water
(makes about 16 slices)
The Easy Method
Instructions:
-preheat the oven to 180° C/ 360° F
-melt the coconut oil
-mix all of the ingredients together in a bowl until well blended
-grease a bread pan with additional coconut oil
-pour the batter into the bread pan and smooth out the top with a back of a spoon
-place the bread pan in the oven and bake for 20-30 minutes
-after 20-30 minutes remove the bread from the pan, and place it upside down on an oven tray
-bake the bread for another 30-40 minutes (upside down)
-once the bread baked, remove it from the oven and leave it to cool before cutting it (difficult because it smells so good, but important)
-once the bread has cooled, slice and serve
-top with unsweetened nut butter, tahini, avocado, cashew nut cheese, eggs or any other topping of choice
-eat and enjoy!
-once the bread has cooled fully, store in an airtight container in a cool place to keep fresh
