Grain-free/ gluten-free vanilla cookies with chunks of raw chocolate chips and chopped hazelnut pieces. Also refined sugar-free and dairy-free.
A great healthy alternative to regular choc chip cookies and perfect as a snack or a yummy treat.
Delicious served with a glass of fresh almond or coconut milk and a hot cup of tea.
-1/4 cup coconut flour
-1/4 cup desiccated coconut
-1/2 cup almond flour
-1/4 cup 100% pure maple syrup
-1/2 cacao nibs (raw cocoa beans pieces)
-1/4 cup blanched hazelnuts
-1/3 cup cold-pressed coconut oil
-1 teaspoon ground vanilla powder
-1/2 teaspoon cinnamon
-pinch of sea salt
-preheat oven to 180 degree’s Celsius (360 F)
-melt the coconut oil (by pouring boiling water into a large bowl and a placing smaller bowl into the water, without burning your hands or getting water into the small bowl place the coconut oil into the small bowl and wait for it to melt)
-roughly chop the hazelnuts
-mix the desiccated coconut, coconut flour, almond flour, vanilla powder, cinnamon and sea salt together in a bowl with the chopped hazelnuts
-mix the eggs together in a separate bowl with a whisk and add to the dry mixture
-add the pure maple syrup, melted coconut oil and cacao nibs
-mix well until it turns into cookie dough
-grease oven tray with extra coconut oil
-roll cookie dough into pieces and push down onto baking tray to make cookie shapes
-bake for 12 to 15 minutes
-leave to cool
-eat and enjoy!
