Lemon & Blueberry Cookies (grain-free)
Lemon & blueberry cookies anyone?
I’ve mentioned that I often dream about food – about how I sometimes create new recipes in my dreams while I’m sleeping!
Well, these cookies were a result of one of my food dreams.
Actually, the dream that I created these lemon & blueberry cookies in was one of the first “food dreams” that I ever had… and so I feel a bit selfish for only sharing the recipe with you now – because it is so freaking good!
I love a good cookie (I’m sure you do too) and I also love a cookie that is both healthy and unique.
There are a lot of cookie recipes in the world – and while I sometimes love a simple cookie like a chocolate-chip cookie, I ALWAYS LOVE a cookie that offers a new exciting flavour experience for my tastebuds… just like these lemon & blueberry cookies do.
This cookie recipe is possibly my favourite cookie creation because it is so deliciously unique and so amazingly yummy!
This recipe is completely sugar-free, grain-free, gluten-free and dairy-free. It’s also totally healthy and free from any nasty, processed ingredients.
I hope that you love it as much as I do – and I love it a lot!
-1 + 1/2 cups almond flour
-1/2 cup desiccated coconut
-1/2 cup blueberries
-4 tablespoons fresh lemon juice
-4 tablespoons 100% pure maple syrup
-4 tablespoons cold-pressed coconut oil (melted)
-1 teaspoon grated lemon zest
-1 teaspoon ground vanilla powder/ pure vanilla extract
-tiny pinch sea salt
(makes 15-20 cookies)
-preheat your oven to 180 degree’s Celsius (360 F)
-mix the almond flour, desiccated coconut, egg, maple syrup, fresh lemon juice, lemon zest, vanilla and melted coconut oil together until well blended
-gently stir the blueberries into the cookie batter
-grease a baking tray with additional coconut oil
-spoon the cookie batter on the tray, making round cookie shapes
-bake for 15-20 minutes
-leave to cool before eating
-eat & enjoy!
-store in an airtight container in a cool place to keep fresh
