Who knew that the combination of sweet potato, squash, mushroom and apple would make the most perfect soup?

I have absolutely been LOVING this simple soup recipe lately – it’s creamy, sweet & a little spicy (but not too spicy – or too sweet).

It’s also totally healthy – and completely dairy, sugar, gluten & grain-free…

…this soup is perfect to make and keep for a few meals. I like to cook up a big pot and keep it in the fridge for easy meals during the week or when I am busy (or when my tummy is sore – read about this below). It’s so easy to quickly heat up a single serving of soup in a small pot on the stove when I’m feeling hungry.

…AND it’s soooo yummy!

Sweet potato, squash, mushroom & apple soup – what I like to call my “tummy healing soup”.

For the past few months I’ve really struggled with IBS issues after eating too much raw food (landing myself in hospital twice) – and so I’ve spent many months researching the best foods to eat (and the foods to avoid) with an upset tummy or IBS.

This soup is the ultimate tummy cure – it contains all the best ingredients for an upset stomach (healing from a virus, stomach bug or IBS).

I highly recommend it. It’s really good at fixing upset stomach’s.

Oh, and it tastes really delicious too…

I designed this soup to be really easy to digest, as well as totally nourishing. Like I said, for the past few months I’ve struggled to eat foods that have not been “easily digestible”.
In this time, I have been forced to research foods that are easy to digest so that I can avoid issues like bloating, stomach cramps and intense tummy aches. IBS is not fun!

This soup recipe is made up of ingredients that are easily digestible and good for curing stomach issues – that is why it is the best sore tummy remedy.

Every time I feel my tummy getting sore because of IBS issues, I cook up a big pot of this soup (which is totally yummy) and eat it for the next few meals until my stomach has settled.

Ingredients:

-4 large carrots
-3 to 4 medium/ large sweet potatoes (peeled)
-1kg diced butternut squash or pumpkin (or a mixture of both)
-250g button mushrooms
-1 or 2 tablespoons grated ginger (fresh)
-2 teaspoons tumeric powder
-1/4 teaspoon cayenne pepper powder
-3 or 4 small-medium apples (peeled)
-6 or 7 cups of filtered water

Instructions:

-peel the carrots, sweet potato, pumpkin, butternut and apples
-bring the water to boil in a large pot on the stove and then turn it down to a simmer
-add the carrots, sweet potato, pumpkin, butternut, apples & mushrooms to the pot
-flavor the soup with the tumeric, cayene pepper and fresh ginger
-simmer for 1 hour or more if needed until all of the ingredients are soft and are starting to fall apart
-remove the pot from the stove (let cool a bit if needed)
-pour into a blender when cool enough to handle (may need to blend soup in parts if blender is small)
-blend soup until smooth
-place back in the pot and back on the stove for a few minutes to heat up again if needed
-serve hot, eat and enjoy!
