MY SIGNATURE WEIGHT-LOSS SALAD
This is my go-to signature weight-loss salad recipe
For years (seriously – years!), I have been eating this salad. When I was trying to lose weight (I’ve lost 40 Lbs), this salad was my everyday go-to lunch. At one point, I think I ate it everyday for lunch, for a year – Lol!
I even posted about my love for this salad a few years back when I started this blog (thank goodness the photography on the blog has improved since then), but today I wanted to give this old favorite of mine another shout out – cause seriously, it’s quite awesome!
This recipe is 100% gluten, dairy and sugar-free. It’s also full of good protein, healthy fats and good carbs too.
I love this salad so much, because it’s such well balanced meal that keeps me feeling full for hours with sustained energy. I also love the flavor combination of avocado, red bell pepper, tomatoes, cucumber and eggs – it’s refreshing and delicious!

-1/2 cup sliced red bell pepper
-1 cup sliced cucumber
-1 cup cherry tomatoes
-handful baby spinach
-fresh arugula/ rocket (optional)
-1 teaspoon olive oil
-squeeze of fresh lemon juice
-sea salt & cracked black pepper (to taste)
-Boil the eggs in a pot of water on the stove for 5-8 minutes
-Slice the red bell pepper, cucumber and cherry tomatoes
-Toss the chopped veggies, rocket and baby spinach with fresh lemon juice, olive oil, sea salt and black pepper
-Top the salad with halved boiled eggs & avocado slices
-Serve fresh & enjoy!
Calories per serving:
2 boiled eggs = 160 cal
1/3 avocado = 100 cal
3 veg servings + leafy greens = roughly 100 cal
1 teaspoon oil = 40 cal
Meal total: roughly 400 cal
