Smoked Snoek with salad
A delicious, light dinner of smoked Snoek, grilled to perfection with a side of fresh cucumber slices and a mixed leafy green salad.
Fresh, healthy and nutritious.
Ingredients (serves 4):
-1 large, fresh and lightly smoked, butterflied Snoek fillet
-1/2 medium English cucumber
-1 handful watercress
-1 handful rocket (arugula)
-2 handful’s baby spinach
-1 red bell pepper
-1 ripe avocado
-2 cups baby rosa tomatoes
-fresh juice from 1 large lemon
-1 tablespoon cold-pressed olive oil
-2 tablespoons sunflower seeds
-sea salt
-cracked pepper
-aluminium foil
Instructions(snoek):
-Place the butterflied fish on a piece of aluminium foil and then into a shallow glass dish
-fold the edges of the foil up slightly to create a basket
-squeeze the juice of 1/2 a lemon over the fish
-sprinkle sea salt and cracked pepper (to taste) over the fish
-preheat oven to 180 degrees Celsius and grill the Snoek for 12-20 minutes
Instructions(salad):
-Thinly slice the cucumber
-chop the avocado, red pepper and the rosa tomatoes and mix them in a bowl with the sunflower seeds, watercress, rocket & baby spinach
-mix the olive oil, the juice from 1/2 a lemon, sea salt and cracked pepper and drizzle over the salad
-serve the salad and the snoek fresh
-eat and enjoy
