Strawberry-Plum Pie (grain-free, sugar-free, dairy-free)
A deliciously tangy, sweet and sour strawberry-plum pie with absolutely nothing unhealthy in the mix. Completely grain, sugar & dairy free but absolutely moist, crumbly, firm and soft all at the same time! This easy-as-pie recipe promises to be completely addictive.
Ingredients:
-8 tablespoons coconut oil
-3 tablespoons agave syrup
-3 free-ranged eggs
-2 tablespoons coconut flour
-1 cup almond flour
-1/2 cup almond flakes
-1/2 teaspoon cinnamon
-1/2 teaspoon raw ground vanilla
-20 small-medium fresh strawberries
-6 small or 4 large dark red plums
-pinch of sea salt
(serves 6-8)
Instructions:
-preheat your oven to 180 degree’s Celsius / 360 degree’s Fahrenheit
-melt the coconut oil
-in a bowl, mix the coconut oil with the eggs, the agave, the coconut flour, almond flour, cinnamon, vanilla and sea salt
-mix, mix, mix
-add the almond flakes
-mix again
-remove the stalks and halve the strawberries
-cut the plums into chunks and remove the pits
-mix the chopped plums and strawberries to the mix
-use a 800 ml/9 inch pie dish
-grease the dish with extra coconut oil
-pour the pie batter into the pie dish
-place the pie into the heated oven and bake for 30-35 minutes
-once cooked, remove from oven and leave to cool for a few minutes
-serve warm (fresh out of the oven!) or at room temperature (saved for later!)
-eat and enjoy!
