This superfood porridge is super creamy & delicious – and it’s packed with lots of nutrients! It’s the perfect oaty breakfast that will leave you feeling fulfilled, content and happy! I know it makes me feel happy and ready for the day… it also keeps me going with sustained energy for hours.

I love oatmeal… and superfoods!

What is a superfood? A superfood is a food that is considered to be beneficial for ones health because it is very rich in nutrients.

Superfood’s in this porridge:

-maca powder
-lacuma powder
-coconut
-raw honey
-macadamia nuts
-cinnamon
-vanilla
-walnuts
-goji berries

This recipe is refined sugar-free, dairy-free, gluten-free, soy-free & vegan – and it’s also a well balanced breakfast meal… it contains healthy plant-based protein, healthy essential fats and good carbs!

Ingredients:

-1/2 cup rolled oats
-1 + 1/2 cups water
-2 teaspoons maca powder
-1 teaspoon Lacuma powder
-1 teaspoon cold-pressed coconut oil
-2 or 3 teaspoons raw honey (or to taste)
-1 teaspoon macadamia nut butter (or almond)
-1/2 teaspoon cinnamon
-1 teaspoon ground vanilla powder/ pure vanilla extract

Toppings:

-a few raw walnut halves (chopped)
-1 tablespoon goji berries

Instructions:

-bring the dry oats and water to a boil on the stove and then simmer on a low temperature for 10-15 minutes, stirring occasionally until fully cooked
-once cooked, remove oats from the stove and add the coconut oil, raw honey, macadamia nut butter, cinnamon, vanilla, maca powder & Lacuma powder to the pot
-stir all ingredients into the oats until well blended
-serve in a bowl, sprinkle with the chopped walnut pieces & goji berries
-eat & enjoy!
