The Healthy Breakfast Bun
What is The Healthy Breakfast Bun? Great question! It’s a breakfast muffin that has been designed to be a perfectly balanced, nourishing, healthy breakfast for people on-the-go, people that don’t have time to make a healthy breakfast in the morning!
This muffin is the ultimate breakfast muffin… it contains healthy protein, healthy & essential fats, good carbohydrates, lots of superfood ingredients AND it is gluten-free, sugar-free, dairy-free and wheat-free.
It’s it’s fruity, it’s nutty, it’s full of flavor…
AND it’s really yummy… and filling, it will keep you going with sustained energy for hours! I promise.
Ingredients:
-1/2 cup dry steel cut oats
-1 to 1 and 1/2 cups water
-1/2 cup dry rolled oats
-4 banana’s
-1/4 cup pumpkin seeds
-1/4 cup sunflower seeds
-1/4 cup flax seeds
-2 teaspoons chia seeds (ground)
-1/2 cup raw almonds (roughly chopped)
-1/4 cup coconut flour
-1/4 cup honey
-1/4 cup cold-pressed coconut oil
-1/2 cup goji berries
-3 eggs (free-ranged and grain-fed)
-2 to 4 teaspoons ground vanilla powder/ extract
-2 to 4 teaspoons cinnamon
-pinch sea salt
(makes 12 to 16 large muffins or 24 to 32 small muffins)
Instructions:
-bring the water to a boil in a pot with the steel cut oats, then turn the temperature down to a low setting and simmer steel cut oats for 20 to 30 minutes or until fully cooked
-melt the coconut oil by pouring boiling water into a large bowl and a placing smaller bowl into the water (without burning your hands or getting water into the small bowl), then place the coconut oil into the small bowl and wait for it to melt
-peel and smash the banana’s with a fork
-roughly chop almonds
-mix the cooked steel cut oats in a mixing bowl with the raw rolled oats, melted coconut oil, smashed banana’s, chopped almonds, pumpkin seeds, sunflower seeds, flax seeds, ground chia seeds and goji berries
-once well mixed, add the coconut flour, honey, cinnamon, vanilla, sea salt
-whisk the eggs and add to muffin batter, mix again
-spoon the muffin batter into muffin papers, placed in muffin pans
-fill muffin papers completely (muffins won’t rise in oven)
-place muffins into oven (preheated to 180 degree’s C or 360 degree’s F)
-bake large muffins for 40-60 minutes/ bake small muffins for 20-40 minutes
-you will know that muffins are ready when you can pierce them with a sharp knife bringing it out dry
-when ready, remove from the oven and leave to cool for 20-30 minutes
-eat and enjoy!
Serving suggestions:
-eat fresh out of the oven (yummy!)
-store in an airtight container and save for easy breakfasts in the morning
-serve with a dollop of your favorite nut butter (but they’re perfect eaten plain too!)
