SIMPLE HEALTHY TOASTED OATS GRANOLA
An easy healthy toasted oats cereal to have as granola with yogurt and fruit
I love a quick breakfast, especially when it’s mostly pre-prepped already. So this toasted oats cereal is perfect for me – it’s a somewhere in between a cereal and granola, but it’s just a very simple version.
I love having some in the morning with plain coconut yogurt (you can use dairy yogurt too, or any yogurt you prefer), fresh fruit, nuts and honey. My absolute favorite breakfast combination for this oat cereal is pink lady apple chopped up with fresh raspberries and dry roasted almonds (imagine that trio served on top of toasted oats and plain yogurt… Yum!).
This toasted oats recipe is gluten-free, dairy-free and refined sugar-free. It’s also full of healthy fibre and good whole carbs.

RECIPE
INGREDIENTS:
-4 cups rolled oats
-1/4 to 1/3 cup maple syrup or honey (I use 1/4 cup)
-1 teaspoon vanilla extract
-1 to 2 teaspoons cinnamon
-2 Tablespoons melted coconut oil
(yields about 4 cups, or 8 servings of 1/2 cup)
SERVING SUGGESTIONS:
-Serve with plain yogurt, fresh fruit, nuts and honey
-I have 1/2 cup for breakfast with 1 cup unsweetened coconut yogurt, chopped apple, raspberries and honey
-I also love it with plain yogurt, banana slices, almonds and maple syrup

METHOD
DIRECTIONS:
-Preheat your oven to 360 F (or 180 C)
-Mix together the oats, cinnamon, honey/ maple syrup, vanilla extract and melted coconut oil together in a mixing bowl
-Line a baking tray with baking paper, and bake for 15-30 minutes (or as needed, until crispy as you like)
-Toss every 5 or so minutes while baking to avoid burning
-Once toasted to your liking, remove from the oven and leave to cool fully
-Store in an airtight container to keep fresh
-Makes about 8 x 1/2 cup servings
-Serve with yogurt, fruit, nuts and honey for breakfast and enjoy!
